4 tablespoons black chia seeds
1½ cups coconut water
1 tablespoon maple syrup
½ lemon, zest of
1 teaspoon vanilla extract
1 cup coconut yoghurt
1½ cups mixed fresh berries
2 passionfruit, pulp of
1 pomegranate, arils of
2 tablespoons macadamia nuts, crushed
2 tablespoons finger lime pearls, fresh or frozen
1½ cups coconut water

Method:
- Begin by soaking the chia seeds in coconut water for 30 minutes, allowing them to swell and form a pudding-like texture. While the chia seeds hydrate, combine mixed fresh berries with maple syrup, lemon juice, zest, and vanilla extract in a bowl. Once the chia seeds are ready, combine them with maple syrup, lemon zest and vanilla extract in a bowl.
- Start assembling the parfaits by spooning some of the chia mixture nito the base of individual serving glasses. Follow this with a layer of coconut yoghurt, then add fresh berries, then add passionfruit pulp, pomegranate arils and crushed macadamia nuts, creating layers for a visually appealing presentation.
- For a final burst of colour and flavour, scatter finger lime pearls over the parfaits. These vibrant, tangy pearls add a delightful pop that elevates the dish. Garnish with edible flowers, fresh mint or lemon balm and serve chilled.
